Avocado Love. Tips on how to freeze and a smoothie recipe.

I <3 you, avocado... This yummy fruit is loaded with the good stuff.  If you're pregnant, you should definitely incorporate this powerhouse into your diet.  Avocados contain folate which benefits baby's development and mom's continued health.  They are filled with calcium, Vitamins C, E K, B1, B2 and B6. Avocado provides fiber which improves digestion, it is rich in iron and aids in absorption of other nutrients.  It is said that the vitamins and minerals found in avocados can help prevent depression in the expecting mom, assist with leg cramps and even help to combat nausea.  These babies are a perfect source of good (monounsaturated) fats but if you need to monitor weight gain, add a few slices to your dishes versus 1/2 to 1 whole avocado.  I love topping my eggs and toast with 1/2 an avocado.  Of course, it's a delicious topping to salad.   You may also try blending 1/2 to 1 whole avocado into your next smoothie.  Try a combo of tropical fruit (pineapple, mango) with coconut milk, ice and a little sweetener (see  recipe below.) YUM!  Embrace this baby into your meals, sweet or savory, it does the trick to keep you healthy and support baby's development.
 
* Super snazzy TIP! * Freeze your avocados to have on hand at all times. I just learned this tip today and had to share it! Our smoothie guy at the grocery store brought out this tray of frozen avocado slices. Being the avocado addict that I am I can not believe that I've never heard of this or thought of it before.
 
How to freeze avocado:
Rinse outer skin. Dry. 
Cut avocado in half and take out the pit. 
Use a large soup spoon to scoop out the fruit from the skin. 
Either freeze avocado in halves or slices. 
Wrap each piece in plastic wrap. 
Place wrapped pieces into a freezer bag. Press out all the air and seal. 
Label and date. 
 
The texture will change slightly, but these will be perfect for smoothies, guacamole, spreads and dressings. 
 
Adaptation of an Avocolada Smoothie
 
1/2 ripe avocado
1 C diced fresh pineapple
1 C (1 full handful) spinach or kale leaves
1 C coconut milk
1-2 T sweetener (honey, agave nectar...)
1 tsp pure vanilla extract
1/2 C ice 
*optional* add 1 T lime juice 
 
Add all ingredients to blender in order listed. 
Blend until smooth. 
Add more coconut milk or water if too thick. Adjust sweetness to taste.
